Stuffed Pudding
Not a dessert of course and it could be ideal to spread over
bread. It has two basic ingredients which makes some sense
of its name ( which is the logical thing with dishes, excepting
rare things like paella and such things).
The stuffing is like a yellow "black pudding" made
from the fat of lamb, pig's bacon, rice, parsley and saffron.
The thickened blood of lamb is cooked under red-spotted sheets
which has a strong stench (this is a joke of course). Add
a tomato sauce with some peppers and garlic and in fact you
have a tasty dish.
The thickened blood is of a brownish color, and should traditionally
have some taste of blood so, those with delicate hangovers
should abstain! Danger of throwing it up!

Drinking

Clarete Wine
Navarra is known for
its wines. And especially for a light-colored "claret"
wine which is popularly called clarete. It can be very refreshing
as an aperitif, but try to make sure you ask for a quality
bottle. It also goes down well with lemonade.
If you ask for an "Indio Josemary", in some bars
they serve you this kind of wine mixed with lemon, while in
other bars they will probably look at you as if you were an
idiot. |

Sanfermin Fauna
The Black-footed ones
These ones come
in from outside for the Festival. They dont do anything
in particular with their lives.. They just sit round and
warm the street pavements and go on making the inventor
of the cheap plastic bottle of wine into a rich man. This
species occupy the lowest tier in the alimentary pyramid
during the Sanfermines. Their role is fundamental in the
balance of the Sanfermin ecosystem as they clean up the
scraps and remnants of the food thrown away.
They are particularly adroit at forming groups to enter
the bull-ring after the bull-fights are over in order to
clean up on the left-overs after the Peñas
and others who have partaken of their rich repasts during
the bull-fight. It must be said that they are generally
pacific people. Against that, some people complain that
they are always bumming your last cigarette. Some of the
dogs from Pamplona have been heard to make complaints
against them as they leave their gardens full of fleas.
