Navarran Trout


This fish dish is king in Navarra and of course comes from fresh-water rivers. As we have already pointed out somewhere, Navarra missed out on a coastline by a short stretch. The trout, although a fresh-water fish, is served salty.

It is simple to prepare. It is just a question of opening it up and slipping some slices of cured ham along the length of body. Then you fry it and it's all ready. Well, it's a fairly common habit to garnish it with some drops of lemon. It's a good dish for those days you might have a hangover. It's easy to digest and the ham from the fish comes undigested.

Vermouth

This is the big star of drinks for the "Sanfermin mornings". Vermouth is the popular name for those bottles which appear on the TV ads, such as Martini Blanco or Martini Rojo. Unlike the image on TV, the number of good-looking swingers who surround you will depend on the number of glasses of the stuff that you have put away.

This time of day, for the aperitif, more or less between, say, 12.00 a.m. and 2.30 a.m. is one of the best times of Sanfermin, especially if you also are invited to some tit-bits and snacks by the good friends who accompany you.

The Human Dregs

Some of these, for want of eating something at the right time, others for drinking everything, even from the nearest puddle on the street,. Others, from eating sandwiches with things moving round between the bread. And others from mixing substances and strange brews or even silicon.

If you pass along the streets of Pamplona during Sanfermines you will more than likely step on one or more of this species of “human dregs “ . Don’t worry - it won’t bring you bad luck. If the “human dregs” is around at the bull-running time it is guaranteed that he will get some quick aid from the nearest auxiliary health service stand.

If he drops down on some open space and is imprudent enough to cover himself with old papers, he runs the risk of being flattened by one of those garbage trucks. It wouldn’t be the first time this has happened here.
